Chicken Fricassee
A rich and flavorful chicken dish braised with mushrooms, herbs, and a touch of brandy. Perfect for a special dinner.

Ingredients
Whole chicken
cut into pieces
Salt
Black pepper
Olive oil
Pancetta
Garlic cloves
Chestnut mushrooms
Fresh rosemary
Fresh thyme
Bay leaf
Brandy
Chicken stock
Fresh parsley
You'll need
- Large frying pan— ovenproof
- Sharp knife and board— for butchering the chicken
Method
Prepare the chicken
Begin by cutting the whole chicken into pieces (breasts, thighs, drumsticks, etc.).
Season the chicken
Season the chicken pieces generously with salt and black pepper.
Heat the pan
Get your pan nice and hot and add the olive oil.
Brown the chicken
Place the chicken into the pan and sprinkle the pancetta over the chicken. Add the garlic cloves.
Cook until colored
Cook the chicken until nicely colored on all sides, about 8-10 minutes.
Add mushrooms
Cut the chestnut mushrooms in half and sprinkle them on top of the chicken.
Add herbs
Add the fresh rosemary, thyme, and bay leaf to the pan.
Flambé with brandy
Pour in the brandy and carefully flambé the chicken (light it on fire to burn off the alcohol).
Add stock and simmer
Add the chicken stock and simmer for about 10 minutes to reduce the stock and finish cooking the chicken.
Finish and serve
Add fresh parsley over the chicken and serve hot.
