Creamy Courgette Soup
A smooth, creamy soup made with fresh courgettes and a hint of basil. Perfect for a light lunch or starter.
Ingredients
Courgettes
peeled and deseeded
Onion
Chicken stock
homemade or store-bought
Fresh basil leaves
1 for cooking, 1 for garnish
Salt
Black pepper

- Large saucepan
- Hand blender— or upright blender
Method
Cook the onions
Start by cooking the onions in olive oil until they are soft and translucent.
Prepare the courgettes
While the onions are cooking, peel the courgettes and remove the seeds. The skin and seeds can make the soup bitter.
Add courgettes
Once the onions are cooked, add the courgettes to the pan and cook for a few minutes until they are slightly softened.
Add stock and simmer
Add the chicken stock to the pan, making sure there is enough liquid to cover the courgettes. Bring to a boil, then reduce heat and simmer for about 20 minutes until courgettes are tender.
Add basil
Add a single basil leaf to the pan near the end of cooking to give the soup a subtle herbal flavor.
Blend and season
Once the courgettes are completely cooked, blend the mixture until smooth and creamy. Season with salt and pepper to taste.
Serve
Ladle the soup into bowls and garnish each with a fresh basil leaf.
