Mojito

The combination of lime, sugar, and a crude form of rum can be traced back to the 15th century in Cuba, used as a tonic against scurvy. Over time, as the quality of rum improved, the Mojito became the global favourite it is today.

Method

Muddle

Place the mint leaves, lime wedges, and caster sugar in the bottom of a highball glass. Muddle firmly with a rolling pin until the lime has released its juice and the mint is fragrant.

Add rum

Add the white rum and stir well.

Fill the glass with crushed ice and churn vigorously.
