Spiced Parsnip Soup
Creamy parsnip soup infused with turmeric, coriander, cumin, and garam masala. A comforting, flavorful soup perfect for meal prep.
Ingredients
Parsnips
peeled and chopped into 2cm cubes
Potatoes
peeled and chopped into 2cm cubes
Garlic cloves
minced
Turmeric
Ground coriander
Ground cumin
Garam masala
or curry powder
Fresh chili
finely chopped
Vegetable stock
or 1 stock cube in 1L water
Oil
for frying
You'll need
- Large saucepan
- Hand blender— or upright blender
- Sharp knife and board
Method
Prepare vegetables
Peel and chop the parsnips and potatoes into 2cm cubes.
Fry vegetables
Heat oil in a pan and fry the parsnips and potatoes for 5 minutes on medium heat until they start to soften.
Add aromatics and spices
Add garlic, turmeric, coriander, cumin, garam masala, and chili. Cook for 1 minute until fragrant.
Add stock and simmer
Add vegetable stock and bring to a boil. Reduce heat and simmer with lid on for 15-20 minutes until vegetables are soft.
Blend soup
Use a handheld blender to blend until smooth. Taste and adjust seasoning if needed.
Optional: Add cream
For a richer flavor, add cream now if desired.
