Spicy Chicken Burger with Cornflake Crust
A healthier take on fried chicken, using cornflakes for a crunchy coating. Perfect for when you want comfort food without the guilt.

Ingredients
Chicken thigh or breast
Egg white
or regular egg
Cornflakes
crushed
Light or fat free mayonnaise
Lemon juice
Seeded brioche bun
Lettuce
Smoked paprika
Garlic powder
Salt
Black pepper
Basil
Thyme
Celery salt
Oregano
White pepper
Mustard powder
Ginger powder
Cooking oil spray
You'll need
- Baking sheet
- Meat tenderizer or rolling pin
- 2 shallow bowls— one for the spice rub, one for the cornflake coating
- Small bowl— for the sauce
Method
Preheat oven
Preheat the oven to 190°C.
0Tenderize chicken
Place the chicken between two pieces of cling film and pound with a meat tenderizer or rolling pin until even thickness.
Mix spice rub
In a small bowl, mix together smoked paprika, garlic powder, salt, and black pepper.
Coat chicken with spices
Coat the chicken breast with the paprika mixture, covering both sides.
Prepare cornflake coating
In a separate bowl, mix together the crushed cornflakes with a tiny dash of each of the secret herbs and spices (basil, thyme, celery salt, oregano, white pepper, mustard powder, ginger powder).
Coat with egg white
Dip the chicken into the beaten egg white to coat it.
Coat with cornflakes
Roll the chicken in the seasoned cornflakes, pressing them onto the chicken to help them stick.
Prepare for baking
Place the coated chicken on a baking sheet and spray with a light coating of cooking oil spray.
Bake chicken
Bake in the preheated oven for 20-25 minutes, or until cooked through and crispy.
Make sauce
While the chicken is baking, mix together the mayonnaise, lemon juice, and ground black pepper.
Assemble burger
Place lettuce on the bottom half of the brioche bun, add the crispy chicken, top with the mayonnaise mixture, and finish with the top half of the bun.
