Spicy Halloumi Burger with Cornflake Crust
A vegetarian twist on the chicken burger, using halloumi with a crispy cornflake coating. Baked for a healthier option that still delivers crunch.
Ingredients
Halloumi
cut into 1cm strips
Egg white
or regular egg
Cornflakes
crushed
Light or fat free mayonnaise
optional
Lemon juice
optional
Seeded brioche bun
optional
Lettuce
Smoked paprika
Garlic powder
Salt
Black pepper
Basil
Thyme
Celery salt
Oregano
White pepper
Mustard powder
Ginger powder
Cooking oil spray
You'll need
- Baking sheet
- 2 shallow bowls— one for the spice rub, one for the cornflake coating
- Small bowl— for the sauce
Method
Preheat oven
Preheat the oven to 190°C.
0Cut halloumi
Cut the halloumi into 1cm strips.
Mix spice rub
In a small bowl, mix together smoked paprika, garlic powder, salt, and black pepper.
Coat halloumi with spices
Coat the halloumi strips with the paprika mixture, making sure to cover all sides.
Prepare cornflake coating
In a separate bowl, mix together the crushed cornflakes with a tiny dash of each of the secret herbs and spices (basil, thyme, celery salt, oregano, white pepper, mustard powder, ginger powder).
Coat with egg white
Dip the halloumi strips into the beaten egg white to coat them.
Coat with cornflakes
Roll the halloumi in the seasoned cornflakes, pressing them onto the halloumi to help them stick.
Prepare for baking
Place the coated halloumi on a baking sheet and spray with a light coating of cooking oil spray.
Bake halloumi
Bake in the preheated oven for 20-25 minutes, or until crispy.
Make sauce (optional)
While the halloumi is baking, mix together the mayonnaise, lemon juice, and ground black pepper.
Assemble burger (optional)
Place lettuce on the bottom half of the brioche bun, add the crispy halloumi, top with the mayonnaise mixture, and finish with the top half of the bun.
